This is something I've only seen done once and was great fun.
There are a number of tracks that could be used, but one of the later add-ons (Retro) has a hillclimb with it.

BergRennen is German for mountain run and the track builder has included two versions of Pikes Peak, a dirt one and this one:

This is me in offline race with CCX production cars which have 1000BHP and do 245MPH but no on this track:
